"Bottled in Bond" used to be a code for "the good stuff." Bonded whiskey is subject to regulation and production rules above and beyond those that normally govern the production of whiskey. Aged at least four years, with a higher proof, and in strictly controlled warehouses, this bottle is a return to a classic expression of whiskey. It's Jim Beam and then some. Honey and spice on the nose, along with oak, cherry, and butterscotch. It's a bold taste, rustic but refined, with vanilla, strong mint, bitter chocolate, and pepper. There's also charcoal, tobacco, and hay. Finish is short but warm, with more wood and mint as well as a bit of caramel. Water tames a bit of the bitterness and accentuates red fruits, chocolate, and pepper. Jim Beam Bonded was originally created for bartenders as a superior mixing whiskey with fuller body and flavor. Less water is added to this bourbon, so its closer to barrel strength, resulting in an enhanced flavor that stands up to the most complex cocktails.
