In addition to the two bold wines that started it all – Apothic Red and Apothic White – Debbie offers a selection of limited release blends. Grapes for Apothic Dark were harvested at night to ensure they were cool upon arrival at the winery for processing. Grapes were then cold soaked for twenty-four hours prior to fermentation. Fermentation occurred at a maximum of 90° in order to maximize the extraction of dark fruit flavors and color in temperature-controlled cone-sweep and upright tanks for up to seven days. A variety of yeasts were used to bring out unique flavors and features from each lot. Following fermentation, the wine was influenced by a variety of oak to add complexity and enhance the coffee and mocha flavors.

Bottega Gold is a Prosecco Doc Brut sparkling wine, obtained by the vinification in white of the Glera grapes, grown in the Valdobbiadene hills. This area is close to the Venetian Prealps and characterized by a climate perfect for this native variety of grape. The vineyards are located on a hilly territory that not only has a landscape of great value but also a long wine-growing tradition. These grapes are handpicked and softly pressed in the winery. The must obtained is maintained in stainless steel containers at low temperature to keep its freshness. It follows the fermentation in autoclave for nearly 40 days, at a controlled temperature of 14-15° C, with the addition of selected yeasts (Charmat method). The golden bottle protects the wine by any source of light, preserving its aroma and freshness thus giving the wine a longer life. A superb aperitif fizz, this has notes of apple, pear, acacia and lily.
